Tasting notes

Powdered Tea used in the Japanese Tea ceremony. Used in Japan and America for cooking and as a base for ice cream.

Background

Matcha is a Powdered tea used in Japanese Tea Ceremonies. The choice of tea for grinding is called Tenka. This is the finest tea flush of the year. Tenka is stored in leaf form ready to be ground into Matcha on the day of the ceremony. Today many Matcha teas are ground a sealed in small tins ready for use. This is a popular tea in Japan without the ceremony. It is full of anti-oxidants and taste fresh on the tongue. Many people drink this tea as a general health tonic. Our Matcha is Organic and a fine grade for all purposes. We recommend it for warm summer days. Matcha is also used in food production. Although our Matcha is a good grade it can be used in making Japanese cakes or used as a fine base for Matcha ice cream.

Perfect preparation

Matcha is an individual in tea preparation. You will need a spoon a whisk and a Matcha bowl. We recommend using Japanese spoons and bamboo whisks.

Boil Freshly drawn filtered water. Leave this to cool down for six minutes. Place two tea spoons of Matcha in a Matcha bowl. Add a little of the cooled water to the Matcha and whisk into a froth. Add warm water to fill the bowl and whisk little again. Your Matcha is ready to drink.

A note on Matcha: Some of you will of tried Matcha in Japan and wondered what all the fuss is about. This s because the Japanese make this tea very strong, almost thick like a soup. We make Matcha here much lighter and this is so delicious. All of the finer almost delicate bitter tastes come to the fore. Making this a refreshing tea. Also try making Matcha and leaving it to cool in the fridge overnight. In the morning you will have a delicious light green Tea to drink or to add to fruit juice for breakfast.
