Tasting notes Nutty and totally refreshing. Full in the mouth with excellent roasted nuances. A slight sweetness can be noted with good preparation. Background Qilan Organic Oolong is a 60% Oolong. Produced in Tong Mu village which is hidden in an area of outstanding natural beauty called the ' Wu Yi Shan' Biosphere Reservation Fujian Province China. Qilan is grown in tea gardens surrounded by Bamboo forests at heights of over 4000ft . All tea produced in this area is still grown using traditional methods, this gives the tea a certain softness lets say sweetness behind its stronger aromas. Complexity never found using modern tea production. I have found this tea to be surprisingly refreshing when drunk in the afternoon. It never fails to give a lift to the senses. This is not due to caffeine and I haven't yet found a good explanation as to why this tea should be so clever. Perfect preparation Qilan requires little care, in fact it is easy to prepare and will almost always produce good results.
Leave boiled water to cool for thirty seconds to a minute before adding to tea leaves. Add two teaspoons of dried tea to a half litre tea pot. Leave the tea to brew for two to four minutes more will produce too much woodiness and the tea will loose any subtlety it has. Personally I do not use milk. In fact I do not use milk in any tea. But some of my customers have recommend Qilan with milk and who am I to doubt them. So milk is fine but a little only.
