Background

Cold Mountain Tung Ting is a fine grade of 12% Oolong. Oolong teas are highly prized in Asia. The teas have qualities and tastes not found in any other tea. Apple scent is a term often used to describe the sweet fruitiness of these teas. All Oolong has something to bite onto. But as the grades get better flavours and aromas appear that you would never expect. These teas often fetch high prices at auction. Most of the best never reaches these shores.

Our Tung Ting comes from the frozen peak mountains of Taiwan. Hence the name Cold Mountain. The name also gives us a clue to how the tea is grown. These tea have an qualities not found in other teas. The tea is grown in almost permanent mist. This ensures a slow growing tea that has time to develop a fine flavour.

Cold mountain Tung Ting is a little lower in quality than our Cold Mountain Jade Ting. This is reflected in the price. But all of the quality aromas are present here.

Perfect preparation

Chinese style preparation for this tea is clear. Half fill a tiny Li-Xiang teapot with Tung Ting. Add water that has been boiled and allowed to cool for one minute. Add this to your tea and leave to brew for thirty seconds. Pour this first tea off. Add boiled water to fill your pot and leave to steep for one minute. Your tea is ready. Repeat this process for as many times as you like omitting the first step. Some Tung Ting Teas can be used up to five times some maybe less.

A simpler method is to boil freshly drawn filtered water and leave to cool for one and a half minutes. Add two teaspoons of Tung Ting to a small teapot, ideally around 400cl. Add your cooled water and leave the tea to brew for one minute. Your tea is ready. Fully empty your pot to serve. To get another steeping add water at the same temperature as before.

This may look quite complex. But it is not. As you get use to this type of tea you will find it easy to prepare.
