Background

Dancong is one of the individuals of the tea world. The name Fenghuang Dancong translates as 'Golden Phoenix' tea. Dancong is grown in Wu Dong county around Fengshan villages in the province of Guangdong China.

Long dark, almost blue leaves brew into one of the most pleasing intense teas to be found in China.

Fenghaung Dancong is plucked by hand using ladders to reach the leaves growing within an open canopy impossible to reach from the ground. Normally in the past this was a tea used in tribute of the Emperor himself, and was held as a priceless gift. Fenghuang Dancong is a rare tea, brewing into one of the most mysterious beverages I have ever come across. I can still remember the first time I tried it and the flavour has never left me.

Perfect preparation

Preparation is in fact easy. Use freshly drawn filtered water, bring it to the boil and leave alone to cool for one minute. Add two teaspoons of Fenghaung to a small,about 300ml, teapot. It is important to make this tea in small pots, this will stop the possibility of adding to much water and dispersing the finer aromas. Add your water and leave to brew and here is the trick. You will have an excellent tea at around two minutes. You will also have an excellent tea at around six minutes, obviously stronger, still unique. Do not add milk. A little experimentation will go a long way with this tea.
