Delicate White Tea of Fujian Province. A must try White. Fruity and a little sweet. Very low in caffeine.

Background

Pai Mu Tan is a must have for any tea selection. There are a lot of grades out there. I have had the pleasure of trying a fantastic £90.00 a kilo grade. Very special. Our Pai Mu Tan is Organic. Grown close to Zhenghe, the original home of White Teas, our Pai Mu Tan offers all the delicate flavours of a fine tea. White Tea production is a complicated affair. Although at first it looks easy compared to Black Teas, White Teas can be easily ruined. Plucking of Pai Mu Tan occurs in the Chinese spring. Fresh leaves and a bud are then taken to production. You will notice that the leaves of Pai Mu Tan are open and bold. This is because the leaf has had no manipulation at all. The leaf is lightly steamed and then simply air dried.

Perfect preparation

Pai Mu Tan needs a little attention to make a perfect cup. We recommend: Bring freshly drawn filtered water to a boil. Leave your water to cool for two minutes. Add two teaspoons of Pai Mu Tan to a half litre pot. Add cooled water to your tea and leave to steep for one minute. Your tea is ready. Pai Mu Tan can be steeped longer if you wish. Pai Mu Tan has, I feel, the easiest flavour to understand of the traditional White Teas. If you leave this tea to steep for six minutes it has qualities and strengths that can be quite nice. These strengths give Pai Mu Tan a defined taste which may be better for lovers of strong Black Tea.
